Tucked away in the Howe of Fife, Daftmill Distillery is one of Scotland’s true hidden gems. Founded in 2005 by brothers Francis and Ian Cuthbert, the distillery operates seasonally in harmony with the rhythms of their working farm. Daftmill produces whisky in small batches using home-grown barley and water from their private well, adhering to traditional methods and a deliberately low-output philosophy. Distilled in 2009 and bottled in 2022, this 13 year old Lowland single malt was matured exclusively in a first fill oloroso sherry butt, producing a deeply flavourful and complex whisky with richness and elegance in equal measure. Bottled at a natural cask strength of 60.2% ABV, with natural colour and no chill filtration, this limited edition yielded just 630 bottles.
